Ingredients:
4 eggs (boiled)
2 tablespoons oil
10-12 curry leaves
1 teaspoon mustard
2 onions (chopped)
1 inch ginger
1/2 teaspoon turmeric powder
1/2 teaspoon dried chilli powder
Tomatoes
2 tablespoons coriander
1 tablespoon oil
2 tablespoons urad dal
Procedure
First boil the eggs, peel them and set aside. Now heat the oil in a pan. Add curry leaves and mustard paste. Now add onion and ginger. Now soften the onion and let it cook for 30 minutes on medium heat. Now stir it well with turmeric and dried chilli powder. Add tomatoes and salt and cook on low heat for 10 minutes. Then add coriander leaves and eggs. At the same time, for the mood, put 1 tablespoon of urad dal in hot oil and fry it until crispy. Now spread this tampering on the curry. Your hot egg curry is ready.
