Today's recipe is soya polao

Ingredients: 1 bowl basmati rice, 1 bowl soya pieces, 1 large onion, 4 to 5 garlic cloves, 1 potato, 1 tsp cumin seeds, 1 tsp hot spices, 2 whole dried chillies, 1 tsp dried Chili powder, 8 to 10 black peppers, two large cardamom…

 






Ingredients: 1 bowl basmati rice, 1 bowl soya pieces, 1 large onion, 4 to 5 garlic cloves, 1 potato, 1 tsp cumin seeds, 1 tsp hot spices, 2 whole dried chillies, 1 tsp dried Chili powder, 8 to 10 black peppers, two large cardamoms, one inch cinnamon pieces, four cloves, two to three bay leaves, salt to taste, one teaspoon ghee.


Procedure: 


First of all, wash the rice well with water and soak it in water for about half an hour. Also soak the soy pieces in water.

 Next, drain the water from both the soya  pieces and the rice and refine in the cooker and let the cooker heat up. When  it is hot enough you first add the cumin, add the cracked garlic and let it turn red. After the garlic turns red, add whole spices, half a teaspoon of cumin, two whole dried chillies, 8 to 10 black peppers, two large cardamoms, an inch of cinnamon, four cloves and bay leaves. After frying for a while, add onion and let it turn golden. When the onion is golden, add potato and soybeans and fry all together on low heat.

 After frying for a while, add rice and fry again for about 30 seconds. Season with salt, rice, dried chillies and hot spices to taste. After 30 seconds add desi ghee and stir lightly to mix everything.Now turn off the cooker by mixing two bowls or water as required. Allow two to three whistles. Then turn off the gas.

 - Soya polao is ready. Now garnish it with coriander and add ghee and serve it with green coriander chutney and pickle.
